Kale & Walnut Pesto

dsc_0409Nutritious and delicious. Full of amazing good fats, healthy hemp seed oil and omega rich walnuts. Hemp seed oil is known for its skin healing properties. Hemp seed oil needs to be refrigerated so you will find it in the fridge in your local health food store. You can use it as a face serum, it can also help clear up acne and problematic skin. I use it on my face every morning because it feels amazing and I notice the glow in my skin. So instead of olive oil we are using hemp seed oil because it has a nutty delicious creamy flavour.

Anyways to the recipe, every ingredient was carefully chosen for health and nutrition reasons because I wanted a saucey, amazingly good for me pesto, to go with my raw vegetables!

Makes 1 x 16 ounce mason jar of pesto.

So we start with;

4  organic Kale leaves – stem removed

1/4 bunch Organic Cilantro

3 cloves of garlic

1.5 cups chopped Walnuts

1/4 cup cashews

3 tbs Nutritional yeast

1/3 cup hemp seed oil

100ml Lemon juice

1/2 tsn salt

about the same amount of fresh ground pepper

Blend in your food processor until smooth and  everything has been broken down into a paste. Transfer to a sealable jar and use it on everything…its gold.

If you aren’t vegan or dairy intolerant. You can put some parmigiano reggiano cheese in here, it will make it rich and cheesey(if that’s what you like about pesto, the Parmesan taste). I have added the nutritional yeast to replace the Parmesan.
