Pinacolada Chia Pudding

DO YOU LIKE PINACOLADAS?? GETTING CAUGHT IN THE RAIN! IF YOUR NOT INTO YOGA, IF YOU HAVE HALF A BRAIN.

No, I’m sure that’s not the actual words but who cares, I love that song and every time I here the word Pinacolada that’s what happens. I sing the wrong words to a song really loudly.

sorry… the recipe! Here we go for PINACOLADA Chia Puds

Pinacolada Chia Pudding

This recipe makes 2 x 12 ounce mason jars

In a high speed blender, blend until smooth.
1 cup coconut milk
2 tbs Lime Juice
1 tbs Maple Syrup
Pour into a bowl and soak
1/3 cup of Chia Seeds

Let sit for 30 mins, so the Chia can absorb all of the liquid and become 
'gluggy' and is easily manageable.

Cut, peel and freeze one half of a small pineapple.

Once frozen blend in a high speed blender until smooth and resembles 
sorbet.

Layer in your mason jars in order of heaviest to lightest.


Spoon one layer of Chia mixture, then follow with coconut yoghurt
or any other vegan yoghurt 

Garnish with a some lime zest and a slice of pineapple.
