Normally when I make granola its a cup of everything, and I make a big batch to last me a week or so of hiking and all the other fun activities that the new year brings. Once everyone is over the hype of the holidays then life sets back in and we have money again for fun outdoor activities! and for those we need healthy granola snacks. Granola is delicious and I hate the ones wrapped in plastic and full of preservatives so I make my own and literally everything goes in. So here’s my NUT-FREE version. Which will make 2 brownie trays of granola or split it for 1 tray.
I will normally throw each individual ingredient into the food processor on its own first, to chop it up to the consistency I like.
Then put them all in a bowl together and combine with my wet ingredients and freeze to set, so here we go.
1 1/2 cups of Shredded Coconut
1 cup Pumpkin seeds
1 cup Sunflower seeds
1/2 cup Hemp seeds
1 cup activated Buckwheat groats
1/4 Cacao nibs
Mix all these up and put in a bowl and set aside
By hand chop up your dried fruit, I like it all so I used;
1/2 cup Raisins
1/2 cup Cranberries
3 dried Figs
1/4 cup of goji berries
Mix in to the bowl of dry ingredients you have set aside.
Now make your wet ingredients, this is the sticky goodness that holds your granola together.
In your food processor add,
1 tbs vanilla
1/2 cup coconut oil
1 cup dates (soaked for 20mins)
1 tbs Raw Cacao
1 tbs Mesquite
1/4 raisins or cranberries
Pinch of salt
Blend until smooth and creamy
If your not to fussed on these being nut free you can add a tbs of Almond butter or Tahini here.
Mix your wet and your dry ingredients together and transfer to your lined brownie trays and press down firmly, and move to the freezer to set.
I normally cut my granola or use silicon molds, to make different shapes to avoid cutting and making a mess.
