The Freshest Mint Balls

0z0a0365-67Soft and minty, using fresh mint, almonds and dates. I couldn’t get enough of the minty flavour so I ended up putting a whole bunch of beautiful mint in this batch. Obviously you don’t have to put that much. But I love mint, so I did.

Mint is a natural breath freshener and I don’t know if any of you have heard of Chocolate Mint? But that would go perfectly in this recipe.

Mint, is full of beautiful health qualities. It not only naturally freshens your breath but it aides in proper digestion and weight control/loss.

It provides relief from depression, fatigue, headaches and nausea. Mint is also a medicinal remedy that has been used for hundreds of years, for asthma and skin care issues.

My original idea was to dip these little dumplings in mint chocolate, but I’m a whole lot of impatient-ness over here, so this is what happened.

But I will show you how to do it the way I originally had in mind.

So I used….

1 cup of almonds(ground)

1/2 cup flaxmeal

1 cup of dates

1/4 cup of Raw Cacao

(for recipes sake, lets say) 1/2 bunch of Fresh Mint or 3 drops of Pure food grade peppermint essential oil

30mls of Water (if needed)

1 tbs of coconut oil

Now I normally do wet things first, so lets put the dates, mint/essential oil, coconut oil and the water in the food processor first.

Blend until dates are broken down and its more of a sticky minty caramel.

Then add your dry ingredients until it forms a dough. Roll into desired portions sized balls and lay on a tray lined with parchment paper, and freeze.

Make your chocolate, because I wanted to dip them I will give you the recipe for the minty dipping chocolate so you can actually finish my recipe.

3/4 cup Coconut Oil

1/2 cup Raw Cacao

1/4 Maple

3-5 drops of Peppermint essential oil

Mix in your food processor for about 20 seconds until combined and creamy.

Transfer to a bowl and dip your minty bliss balls into the chocolate mixture using two forks and place back on your tray to go back to the freezer to set.

Wait 10 minutes or so, before you eat or serve. So you know for sure the chocolate is set.
