Coco-shew Bounty Bars

These little bars of bliss are almost completely ‘any form of sweetness’ free! So those of us who are super restricted to little to no sugar at all, can have these! Do I hear cries of happiness?! yes! I’ve seen them too! I had one particular guy stare at my treats with such a look of lust, it was painful. I asked him if he would like to try one. His reply broke my heart a little. Another candida sufferer! Everyones individual story about candida is just as painful as the last. It seems to be a never ending battle for some.

This man had come so far, he refused to go back and even though he craves sugar so bad he refused to give in…..which is a strength I can only dream of.

But when I told him, there was a minuscule amount of maple syrup in the chocolate of  this treat and that if he wanted to, that would be the best treat for him.

He grabbed it from the table and shoved it in his mouth, without saying a word.

Have you ever seen someone smile with a full mouth of food…..its pretty funny and revealed a cheeky smile on mine. Another happy customer.0z0a0278-32The recipe can definitely be evolved to your liking but I kept this one, for the straight up coconut lovers!

Makes one Brownie tray of bounty’s, which equals about 30!


4 cups of shredded coconut

4 cups of soaked cashews – soak for atleast 4 hours

1 cup of coconut cream

1 cup coconut oil

1 tbs Vanilla

Blend in your food processor till fine.

Line your tin with cling film and spread mixture evenly and pop in the freezer to freeze.

Once frozen remove from tin and cut into portions.

Dip portions into chocolate mixture* and lay on a flat baking tray lined with parchment paper and chill.

*Follow Raw Chocolate recipe, repeat if you need.
