White chocolate…generally people who hate chocolate….will eat white chocolate.
Why? cos its creamy! it melts in your mouth, and its so sweet and delicious. It reminds me of the milky bar kid (those of you Australians will probably remember him).
White chocolate goes with most things; raspberries, lemons, blueberries, mango, blackberries, rhubarb, chocolate….and more chocolate, triple chocolate.
So naturally I was a tad devastated when I learnt the ways of the ‘Dairy industry’ and thus….letting go forever of white chocolate.
I don’t believe in cruelty to animals, but I’m not going to post it all over my page or any one elses page….I simply will not support it ever.
So I made my own white chocolate and I must say it is a million times better and I literally can’t eat a whole block of this one, its to filling.
It helps if everything is room temperature and you have a high powered blender for this one to get the smooth creamy consistency of White Chocolate
200g Cashews – Soaked over night and rinsed with warm water
70ml Maple Syrup
30ml Vanilla – or more if desired
30 ml Cacao Butter – Melted
50ml Coconut oil – Melted
Put all of your liquids in the blender first and lastly the cashews and blend on high for atleast 2 minutes.
Put into your chocolate moulds and chill until hard.
Makes roughly two cups of white chocolate, mix and match with whatever you like.
