Raw GF White Chocolate Blondie

Everyone is doing their version of a raw brownie these days. I love it! But I hadn’t seen anyone attempt a raw blondie yet. Much to my dismay because Blondies are my favourite!

Specially when you have Rapunzel White chocolate to work with. I wanted to do something different and not just make it raw, but gluten free and riddled with super foods too.

I really only share these ‘recipes’ with you so you can get an idea of what I used. Because I went into the kitchen with an idea of what I wanted it to taste like and just let it roll together from there. The whole idea is to get you thinking with your taste buds and use them to create the Blondie YOU have in mind, instead of just following a recipe. Make this Blondie yours, use your creativity and fall in love with it because its uniquely yours. Your making it! Own it! When your done, I wanna hear what you did to make it awesome.

This is my version and it was epic!

Dry ingredients
Blend each ingredient individually until fine and then combine together.

1 cup of Sunflower seeds
1/2 Linseed
1 cup Cashews
1 cup Brazil nuts
1/2 cup of White Chia Seeds
1/3 cup of Maca powder
1/3 cup of Lucuma
pinch of Himalayan salt

Wet ingredients
Combine together in food processor/thermomix until wet and sticky
2 cups of dates
1/2 cup Maple syrup
Lemon Zest
1 thumb size of Turmeric finely Grated
1 small tin of coconut cream

Combine wet and dry ingredients with your hands or a wooden spoon

Roughly Chop;
1/2 cranberries
1/2 pistachios
1/2 goji berries
1/2 White chocolate shards

And to brownie mixture
(be sure to taste mixture as you go. If you feel it needs more sweetness please do so, as I don’t like my treats to be very sweet. so I limit the sweet stuff and add more flavour instead.

Line Brownie tray with glad wrap and squish mixture into tray

White chocolate coconut cream ganache
1 small tin of coconut cream
1 cup of white chocolate chunks

Heat coconut cream in saucepan until you see small bubbles coming up the side but not until boiling.
Remove saucepan from heat and transfer into heat proof bowl with white chocolate and combine with spoon, until liquid golden texture.
Spread over the top of the brownie and top with your choice of yummies.
I used white chocolate shards, crushed pistachios, pink rose petals.

Then refrigerate for a few hours or freeze if you lack patience (like me) 🙂

Once solid, slice into your desired portion size and then stick it back in the fridge.

Finally …..eat it!
