13 serves of Vegetables a day you say? Challenge Accepted!!!

According to the World Health Organisation and the recommended daily requirements of the new and improved food pyramid. The average person is to consume 13 serves of vegetables per day.

 

Due to the lack of nutrient dense vegetables in the current world crisis of mass overproduction. As a result our soil is depleted of rich nutrients because it doesn’t have enough time to replenish before it is struck with another row of seeds to grow, in order to feed our ever growing population. Therefore the quality of our fruits and vegetables has also depleted which means we have to eat more fruits and vegetables to accommodate for this!! On top of the ones we already aren’t eating!!

So….I set out on a challenge to see if I could eat 13 serves of vegetables in one day.

Now I’m a vegetarian and didn’t see this as much of a challenge, because that is basically all I eat anyway. But….this is how it went.

For breakfast I had;

Scrambled eggs with half a grated zucchini topped with half an avocado.

(1 serve of vegetables)

Lunch consisted of: Roasted cauliflower, broccoli, zucchini and quinoa salad.

(2 serves of vegetables)

Dinner was: Roasted carrots, sweet potato, potato and pumpkin

(3 serves of vegetables)

Now if I can count and I’m just estimating serving sizes here but that’s only 6!! and I ate vegetables all damn day!! When I add in my veggie vitamin capsules, which is roughly 10 vegetables per 2 capsules that takes me to 16 but …I had to eat veggies all day! Veggies for breakfast!

But at the end of the day, I was stuffed. I didn’t have room for any of the other nutrients that I also need everyday. Like fruit for example or any sources Iron, Calcium, Folate or any other vital nutrients that have their own RDI.

Now this is me…for one day, on a mission to test a recommendation intended for the WORLD!!!

 

Most people I know don’t eat breakfast, let alone 13 serves of vegetables.
