‘Figging’ Amazing Chocolate!

I don’t know about you, but I hate these cheap, little crappy chocolate eggs they bring out at Easter. Which basically consist of Cane sugar, cocoa mass, cocoa powder and a bunch of emulsifiers and preservatives. Then they try and pass them off as quality chocolate! Please…

So I made these little morsels, for my loved ones this Easter.

The best part being, it doesn’t have to be Easter to eat them. You can make them in under half an hour (not including fridge time), they won’t make you feel sick if you eat the whole lot and they are actually so good for you!!

Ginger – Builds a solid immune system – Awesome because winter is just around the corner for us ‘strayans’
Lime – Helps detoxify from cancer promoters in the body – Also ginger and lime are best friends when it comes to dessert 🙂
Coconut and coconut oil- The nut of life – Because the benefits are endless, but to name a few;
1. Rejuvenates your skin 2. promotes healthy looking hair and complexion and 3. supports tissue healing.
Raw Cacao – Extremely rich in antioxidants and Magnesium. Also promotes your sense of well-being and releases feelings of love. Ever heard of phenylethylamine? the love drug…naturally found in cacao. Not to mention a natural serotonin stimulant. So eat up!
Figs – Figs are also known as the ‘Fruit of Life’, as they hang in twos and resemble testicles. Figs can also increase sperm mobility. Ha! fun (totally awkward) fact of the day.

OK the recipe!! its sugar free (except the natural sugar in the figs), gluten free, vegan, dairy free. Everything free and they are deliciously rich. You will hit your chocolate limit after one or maybe two!

So start with collecting your ingredients, from your local organic food store or you can always just purchase online, its normally cheaper.
Notice I didn’t put any sweetener in the chocolate, because the dried fig is already very sweet and they balance each other out int the end product.

*But if you wish, you can put some Maple Syrup in there. I found Pure Canadian is best(ofcourse). Love you Canada! x

Ingredients for stuffing;
1 cup Shredded Coconut
1/4 or so of coconut milk
a small nob of ginger
Juice and zest of a lime.

Gradually combine together in a food processor or blender until a soft, doughy consistency or you reach your desired texture.

Ingredients for Chocolate:
150g of Raw Cacao Butter
100g Virgin Cold Pressed Organic Coconut Oil
8 or 9 tbs of Raw Cacao
Pinch of salt/ 1 tbs of Maple Syrup if desired

Put the cacao butter and coconut oil in a heat proof bowl over a saucepan of hot simmering water(kinda like a double boiling method)
Melt them together by stirring frequently.

10 Dried Figs
The figs will be fiddly, its best the get the best quality ones you can get other wise it just won’t work.
But this is what they should look like, once they are ready to be stuffed!

Dip your stuffed figs in the chocolate mix, then put on a cold plate and chuck them in the freezer for 10mins.

Do this 2 or 3 times to get a nice thick coat of chocolate on your figs!

Once the chocolate is hard, transfer them to the fridge. You can eat them straight out of the fridge or at room temperate. What ever you choose!

But remember to hide a few for yourself because there’s never left overs with this one!
